Whole 30 – Day 1- Meal 2

For meal 2 I had an Emerald kale salad with grilled chicken breast. Kale is a pretty new ingredient for me. It’s definitely tough and has a stronger flavor than lettuce. I’ve attached a picture below of the salad. I got this recipe from the Autoimmune Paleo Cookbook by Mickey Trescott.

Recipe: makes 4 servings (I cut the recipe in half and ate the whole thing)

Ingredients – 1 bunch curly leafed kale, stemmed and finely chopped. 2 tablespoons of olive oil. 1 teaspoon sea salt, 1/2 lemon, juiced (1 tablespoon). 1/4 minced red onion, 1/4 finely chopped cucumber.

1. Place the chopped kale in a large bowl; drizzle with olive oil and sprinkle with salt.

2. Massage the kale gently with your hand for 5 – 10 minutes, until the tough fibers of the kale break down and soften somewhat.

3. Toss with lemon juice, onion, and Kale.

Note: Keeps well in the refrigerator for several days.

I added grilled chicken to my salad which I grilled the day before and seasoned with salt, pepper, and dried oregano.

My Yoga Journey

I got hooked on yoga about 2 1/2 years ago. My husband was putting a lot of hours in at his job and I needed something to do other than sit on my butt at home after work. I had never tried yoga and we actually really nervous, what if I can’t do the poses? But I sucked it up and went to my first ever yoga class, and I actually didn’t really care for it. It was hot, I couldn’t hold a lot of the pose and it definely wasn’t relaxing. The studio I went to offered a week free so I decided that I had to give it a few more tries before I would write it off. I went another 4 times that week and by the end of my free week I bought a package and decided this was my new hobbie. Since then I have contineued to deepen my yoga practice and practice at least 3 times per week at the studio.

Eating Healthy…This is kind of new for me.

About 2 months ago I saw a 3 minute clip on GMA about Whole30. It was intrigging so I looked it up. It’s a 30 day program where you eat only protein, vegetables, healthy fat and some fruit. I was determined to try this program. I was not over weight and actually ate okay but it wasn’t necessiarily healthy foods I was fueling my body with. I made it through the 30 days and felt better than ever! I have adopted the Whole30 meal plan as my new healthy eating lifestyle.
